"Translating a region's cuisine from one hemisphere to another is a daunting task. Not the least of the problems is finding the right ingredients on a continent with different climates and traditions. Most of the time even the best cooks can only approximate the flavors of their native cuisines in a foreign land.
Prima Taste USA avoids many of those problems by not only training its cooks in Singapore but also employing more than two dozen spice pastes prepared on the island at the tip of the Malay Peninsula for the dishes on its vast menu. The restaurant, on a corner of San Jose's Pacific Rim Plaza No. 2, opened in March and is the first American franchise of a Singapore-based firm known for its packaged mixes and spice pastes. The chain has restaurants from Shanghai, China, to Perth, Australia.
Think of it as Singapore's equivalent of the Olive Garden. The food is reliable and basically satisfying with some outstanding dishes -- the sweet and spicy Singapore chilli crab alone is worth a visit. ..."
